Turkey & Portobello Meatballs with Sweet Potato Noodles

Ingredients:

  • 1 lb Lean Ground Turkey
  • 1/4 cup Portobello Mushrooms, diced
  • 2 egg whites
  • 1/4 cup Oats
  • 1 tsp. Garlic Powder
  • 1 tsp. Dried Onion or Onion Powder
  • 1/4 tsp. Cumin
  • Salt/Pepper to taste

Directions:

Pre-heat oven to 375 degrees.  Combine all ingredients in a medium mixing bowl.  Line a cookie sheet with foil.  Round into meatballs and place on cookie sheet.  Bake for 20-25 minutes or until center reaches 160 degrees.

Sweet Potato Noodles

Ingredients:

  • 1 Medium Sweet Potato
  • 1/2 tsp. Cinnamon
  • 1 Tbsp Olive Oil

Directions:

Wash your sweet potatoes under cold water and then peel.  Rinse peeler, and peel long, “noodle” strips off potato, or use a mandoline to slice your sweet potato lengthwise into thin strips.  Add olive oil to a large saute pan over medium heat and add in all of your sweet potato noodles.  Continually stir and cook until the sweet potatoes are cooked through to your liking, about 5 minutes.  Sprinkle with cinnamon and mix well.
